The Cloud Bread Recipe (Easily Made Vegan!) ☁️


If you’ve ever dreamed of a bread so soft and fluffy it feels like biting into a cloud, this recipe is for you! My Cloud Bread lives up to its name: pillowy, light, and comforting—perfect for sandwiches, toast, or enjoying plain with a little jam.

The best part? It’s simple to make and can easily be made vegan-friendly with one quick swap!

Let’s dive in.

Ingredients

  • 2 cups warm oat milk (or any plant milk you love)
  • 2 tsp yeast (or 1 standard yeast packet)
  • 1 tsp sugar (to activate the yeast)
  • ½ cup unsweetened applesauce
  • 1 egg or flax egg (For flax egg: mix 1 Tbsp ground flaxseed with 3 Tbsp water, let sit 5 mins)
  • 1 tsp baking powder
  • 5 cups all-purpose flour

Instructions

Step 1: Activate the Yeast

In a large mixing bowl, combine:
  • Warm oat milk (make sure it’s not too hot—around 100°F is ideal)
  • Yeast
  • Sugar
Give it a quick stir and let it sit for about 5 minutes until it’s foamy. This means your yeast is alive and ready to work its magic!

Step 2: Add the Wet Ingredients

Mix in:
  • Applesauce
  • Egg (or flax egg)
  • Baking powder
Stir well until everything is combined.

Step 3: Add the Flour & Make the Dough

Gradually mix in the 5 cups all-purpose flour. The dough may be a bit sticky! 

Step 4: First Rise

Cover the bowl with a clean towel or plastic wrap and let it rise in a warm place for about 1 hour, or until it has doubled in size.

Step 5: Punch & Second Rise

Once the dough has risen, gently punch it down to release the gas. Divide it into portions and fill your mini loaf pans halfway.  I love these silicone mini loaf pans because they make the most adorable little loaves, which are the perfect serving sizes for individuals... plus, they're so easy to clean and don't need any oil.

Cover again and let them rise for another hour.

Step 6: Steam Bake for Ultimate Softness

  • Preheat your oven to 350°F.
  • Place a shallow pan of hot water on the bottom rack of the oven to create steam.
  • Lightly cover your loaves with foil (don’t wrap tightly—just a loose tent).
  • Bake for 20 minutes. The steam keeps the crust soft and helps create that dreamy cloud-like texture.

Tips & Variations

✔ For Vegan Bread: Use the flax egg instead of a regular egg.
✔ Make it Sweet: Add a more sugar or a drizzle of maple syrup to the dough for a sweeter version.
✔ Extra Fluffy? Use bread flour instead of all-purpose.
✔ Storage: Store in an airtight container at room temperature for 2–3 days, or freeze for longer.
